I&#39;m also driving into NYC this morning which is totally appropriate as my story is set in NYC in a blizzard. It was more fun to imagine my story than it is to deal with bad weather in real life, which is why I wrote it. I wanted to see how much fun you could have in bad weather. Turns out – a lot. Thanks for this post.<br /><br />As for pie, this isn&#39;t a recipe, just a quick seasonal tip. Do you find store-bought mincemeat a little too rich and heavy? Chop up a nice crisp apple, quite finely, and add it to the mincemeat. One apple per pie or batch of tarts. And of course don&#39;t forget a healthy splash of brandy!<br /><br />I&#39;ve never been to Maine but would love to. My fave getaway is on our old wooden power boat. We cruise the Gulf Islands of British Columbia, which are utterly gorgeous. She&#39;d always prepare it for both Christmas and New Year&#39;s, so I think of this as a real holiday treat. Sometimes she&#39;d dust the whipped cream topping with red and green colored sugar or a rich cocoa powder. I thank Southern Living for sharing the basis of this recipe, which I&#39;ve amended slightly (and I think my mother cribbed hers from the Nabisco chocolate wafer box each year). Enjoy!<br /><br />Chocolate Lover&#39;s Icebox Pie<br /><br />Ingredients:<br /><br />CRUST 1 package chocolate wafers (9oz) 1/2 cup butter, melted 2/3 cup sugar FILLING 3 tablespoons cornstarch 4 egg yolks 2 cups milk 2 (4-oz.) bittersweet chocolate baking bars, chopped 1 tablespoon Cointreau or Grand Marnier 1 1/2 teaspoons vanilla extract TOPPING 2 cups heavy whipping cream 1/4 cup sugar<br /><br />Easy Preparation:<br /><br />To prepare crust 1. Pulse chocolate wafers in a food processor (8 to 10 times) or in blender until finely crushed. Combine wafer crumbs and butter in bowl then firmly press mixture in greased pie pan (9&quot;) with lip at top. Freeze crust 30 minutes.<br /><br />To prepare filling 1. Whisk together 2/3 cup sugar and 3 Tbsp. cornstarch in a 3-qt. heavy saucepan. 2. Whisk together egg yolks and milk in a small bowl; then whisk yolk mixture into the sugar mixture in pan, and cook over medium heat, continuing to whisk constantly, 10 - 12 minutes or until mixture thickens. Cook 1 more minute. Remove from heat. 3. Microwave chocolate in a microwave-safe glass (Pyrex) bowl at HIGH 1 1/2 minutes or until melted, stirring frequently. Then combine the melted chocolate, Cointreau, and vanilla into the thickened filling. Spoon into prepared frozen crust. Place plastic wrap directly on filling and chill in refrigerator overnight.<br /><br />To prepare topping 1. Beat whipping cream and 1/4 cup sugar at medium-high speed with an electric mixer until soft peaks form. In a medium saucepan, combine cea, millk, eggs, sugar, flour,<br />cornstarch, and salt. Bring to a boil over low heat, stirring constantly.<br />Remove from heat, and stir iin coconut and extract.
